Enjoy Ana Halsey’s Recipe – Quinoa Salad with Black Beans
. 1/2 cup Quinoa (about 2 cups cooked)
. 1 cup of water or vegetable broth
. 1/2 cup Red Bell Pepper (yellow, orange …any color)
. 1/2 cup Cilan…tro
. 1/2 cup Onion
. 1 cup Black Beans
. 3 Tbsp Balsamic Vinegar
. 3 Tbsp Olive Oil
. Salt and Black Pepper to taste
Instructions: Place the quinoa in a fine mesh strainer or colander and rinse well until the water runs clear, about 30 seconds. Let the quinoa drain for a few seconds, then add the rinsed quinoa and water or broth to a medium saucepan. Bring it to a boil. Turn heat to low, cover and cook for 15 minutes. Let cool for 5 minutes, fluff with fork.
In a large bowl put the quinoa, bell pepper, cilantro, onion, black beans, balsamic vinegar, olive oil and salt/pepper to taste. Mix well and enjoy it! buy meridia online
